Ingredients
· McCain® Liege Sugar Waffles
· Caster sugar – 75 g · Cinnamon stick – 1 nos
· Star anise – 1 nos · Strawberry – 40 g
· Blueberry – 20 g · Blackberry – 20 g
· Red berry – 30 g · Basil – 20 g
· Water – 1 cup · Lime juice – 1 cup
· Chantilly – 40 g
Directions
· In a sauce pot, combine the sugar, water and spices.
· Cook over a low heat until the sugar melts in the water and add half of the red berries and half of the strawberries.
· Simmer the syrup for 10 minutes to infuse the flavours and add the basil.
· Remove from the heat, add the lime juice and infuse for 30 minutes.
· Discard the spices and basil leaves, and place the infused syrup in a chiller until cold.
· Cut the remaining fruits in half.
· In a pre-heated oven at 180˚C, bake the waffle for 1 minute 30 seconds.
· Place the waffle on a plate and spread the Chantilly on top.
· Add the infused fruits and syrup on top of the waffle.
· Serve immediately.
