English Breakfast
Ingredients

· McCain® Tots   · McCain® Ecopouch Mushroom 32mm
· English muffin – 1 nos   · Egg – 1 nos
· Tomato – 1 nos   · Baked beans – 60 g
· Chicken sausage – 1 nos   · Spinach – 60 g
· Olive oil – 1 tbsp   · Butter – 50 g
· Thyme – 1/2 tsp   · Oregano – 1/2 tsp
· Sage   · Salt & pepper

Directions

For the mushrooms
· In a small sauté pan with medium heat, melt 20g of butter till brown.
· Add McCain® Ecopouch Mushroom 32mm and cook for 2 minutes, season with thyme, salt & pepper.
· Lower the heat, add the spinach and cook till soft but still crunchy for 2 minutes.
For the tomato
· Remove the top of the tomato and season it with oregano, olive oil, salt and pepper.
· Roast the tomato in a pre-heated oven at 220˚C for 8 minutes.
English breakfasts
· In a small non-stick pan, melt a tablespoon of butter.
· Whisk the egg and cook till fluffy and firm for 2 minutes. Be careful not to let it dry.
· Place the egg inside the muffin and reserve.
· Using a pre-heated griller at high temperature, grill the sausage and the corn cob till golden brown for 5 minutes.
· Fry McCain® Tots for 2 minutes 30 seconds at 177˚C and reserve.
· In a large plate, display the heated baked beans, muffin, sausage, roasted tomato, mushrooms, tater tots and corn cob.
· Season the corn with ½ tablespoon of butter and garnish the plate with fresh sage.
· Serve immediately.
